these were unreal. so easy, I put it together in 5 minutes before heading out the door at 8am and when I was home by dinner time all I had to do was make some rice. I used this recipe and the only difference was that my chicken breasts were frozen but it truly didn't make a difference. I tossed everything in the crockpot, stirred it up and let it cook on low for 8 hours.
ingredients included but were not limited to: black beans, frozen corn, salsa, oregano, and a few others. I didn't have any cayenne pepper so I used tabasco sauce instead and I forgot to add water but you couldn't tell.
the chicken was ridiculously tender. all I had to do was take a fork and drag it through the mix in the pot and the chicken shredded effortlessly. this fed four of us plus enough leftovers for two of us to take for lunch the next day. it tasted better the second day because all the flavours had melded even more but it was delicious piping hot out of the cooker with shredded cheese. I didn't have any cilantro to garnish it with but once again, didn't matter!
I think the crock pot may become something I will rely on heavily during the winter months. it's so easy to toss everything in it and let it cook all day while I'm in class. there will always be leftovers and there is always enough to share with roommates. I will definitely be making this one again in the near future, I really enjoyed it.
any crockpot meal suggestions? I'm always open to new things to try! other than that, I hope everyone is enjoying the shift in seasons. watching the leaves change and feeling the air get cooler is one of my favourite parts of fall.
I want to do lots of baking with apples this season because it's when their in their prime! I may even try to convince andrew to go to an apple orchard with me and then make a pie! until next time, happy making!
